Abiaka Wood Fire Grill

Celebrate Christmas at Abiaka this year with a la carte specials featuring pulpo a la gallega croquette with yukon potato, octopus, citrus espelette aioli; charred New York strip with spiced goat cheese, piquillo, chimichurri; and coquito tres leches with dulce whipped ganache, milk chocolate crunch, and caramel sauce.

For New Year’s Eve, Abiaka will highlight scallop tiradito with blood orange, rocoto, avocado, plantain; Herbed Lamb Chops with romesco, lulo aji, and root vegetables; and mango custard with queso panela crumble, vanilla lime gel, grapefruit, meringue, and coconut sorbet.

Cipresso

The resort’s contemporary twist on Italian fare will offer a prix-fixed menu for Christmas Eve. The prix-fixe menu will include amuse bouche of smoked salmon crocchetta and lemon aioli; appetizer of beets carpaccio with hazelnuts, raspberries vinaigrette, and gem lettuce; fritto misto di natale of cod, shrimp, calamari, eggplant, zucchini squash, and marinara sauce; main course consists of veal chop with fried risotto alla Milanese; dessert of panettone gelato profiteroles with almond crunch, and chocolate sauce.

Ring in the New Year with an amuse bouche of stuffed zucchini blossom with caprino, ricotta, and truffle honey; an appetizer of burrata with prosciutto, figs, and aged balsamic; a white truffle risotto with wild mushroom fricassee and parmesan or a lobster and crab pappardelle with poached Maine lobster, fennel confit, diced tomatoes, and saffron; a secondo of Colorado lamb chops with eggplant caponata, lamb demi, and pine nuts; dessert of torta caprese with citrus champagne sorbet, pistachio panna cotta, raspberry compote.

Council Oak Steaks & Seafood

The classic American steakhouse will showcase a frito misto with soft shell crab, red Argentinian shrimp, sole, piperade, myer lemon, and basil aioli; pumpkin swordfish with piccata butter, creamy polenta, confit tomato; and molten lava cake with malted milk chocolate pudding cream and vanilla ice cream.

New Year’s Eve and New Year’s Day specials include appetizers of cured king salmon with beet cured, pickled beets, blood orange gelee, crème fraiche, osetra caviar, and herb oil; beef steak tomato tartar with fried burrata, capers, 25-year aged balsamic, and puff pastry; blue fin toro crudo with yuzu, golden berry vinaigrette, crispy quinoa, finger lime, and chili oil; wagyu croquette with black truffles, charred cipollini onion puree, wild mushroom, and citrus aioli; and lobster “french toast” with brioche, Maine lobster, lobster nage, persimmons, cucumber, cream fraiche mousse, Siberian sturgeon caviar. Entrées of pan seared scallop of U8 scallop, trumpet mushrooms, black truffle butter, kabocha puree, blackberry gastrique, smoke trout roe; Hokkaido wagyu striploin with sauce perigord, salsify, chanterelles mushroom, and black truffles; surf and turf with A4 wagyu tenderloin, king crab thermidor, Thumbelina carrot, baby turnips, sauce au foie gras. Dessert will be a champagne strawberry gateau with lemon zest sponge, champagne mousee, vanilla cream, and strawberry sauce.

Kuro

Kuro’s Christmas specials will feature chirasahi comprised of a medley of fish from Japan and sakana no karaage with fried whole fish and spicy tofu sauce. Guests can finish dessert with mont fuji with chestnut cream, crunchy meringue, vanilla custard, blueberry cassis compote, and matcha anglaise.

End the year on a high note with Kuro’s New Year’s Eve menu that includes a bento box with sashimi, nigiri, battera sushi, sunamono, roasted king crab and filet robata; matsutake dobin mushi with lobster and mushrooms, and negi; caviar with shallot, crème fraiche, chives, and blini; and pop rock yuzu smore’s with araguani cream, raspberry gel, marshmallow, yuzu sortbet, crunchy rice, speculoos crumble, and hot milk chocolate sauce.

Rise Kitchen & Deli

Christmas Eve and Christmas Day specials at Rise Kitchen & Deli will feature grilled bone-in pork chops in apple cider gravy, apple cranberry stuffing, and collard greens; crab stuffed grouper featuring lemon couscous and drawn butter; and hanger steak with fondant potato, swiss chard, and brandy peppercorn sauce.

Ring in the New Year with 8oz. NY strip topped with lobster thermidor, au gratin potatoes, haricot verts; pan seared flounder with citrus tomato sauce, jasmine rice, sauteed spinach; and PEI mussels with little neck clams, pomodoro sauce, and linguine pasta.

All through December, Hard Rock Cafe is featuring a delectable holiday menu featuring two or three-course meals with choices of caesar or berry salad, baby back ribs, chicken milanese, grilled salmon, chicken blue cheese flatbread, steak & frites, classic smash burger, mushroom swiss burger, cranberry burger, and a caramel apple cheesecake for dessert. The Guitar Hotel Light Show

A South Florida landmark, The Guitar Hotel Light Show at Seminole Hard Rock Hollywood runs nightly. The light show runs Sunday through Thursday at 7 p.m. and Fridays and Saturdays at 7 and 7:30 p.m. The guitar’s newest show, “Our Legacy in Lights & Music,” remixes classic songs with a modern techno flair complemented by mesmerizing graphics on the guitar façade.
