Orin Swift Wine Specialist, Trevor Hogue, Hosts Four-Course Pairing Dinner with Dishes by Creative Culinary Director Frank Anderson and Chef de Cuisine Francisco Pomalaza

WHAT:  Council Oak Steaks & Seafood, located at Seminole Hard Rock Hotel & Casino Tampa, will welcome, Trevor Hogue, an Orin Swift wine specialist, to host the March wine-pairing dinner on Wednesday, Mar. 13.  

The dinner will consist of four courses, plus an intermezzo, accompanied by wine pairings. Creative Culinary Director Frank Anderson and Chef de Cuisine Francisco Pomalaza will tempt palates with New American preparations featuring prime beef and top-quality seafood following a 6:30 p.m. welcome reception.  Guests will begin dinner with a first course of Scallops Crudo with Cantaloupe, Shrimp Oil and Caviar, paired with Blank Stare’s 2017 Sauvignon Blanc. The second course will feature Tuna Carpaccio served with Foie Gras Torchon, Brioche and Chives, paired with Mannequin’s 2016 Chardonnay. For the Intermezzo, guests will cleanse their palates on a White Peach Sorbet in preparation for the rest of the meal. The third course, paired with 8 Years in the Desert’s 2017 Zinfandel Blend, is Lamb Loin served with Agnolotti Pasta and Mustard Frill. Dinner will commence with Devil’s En Papillon plated with Braised Prunes, Mascarpone Cheese and Foie Gras, paired with Papillon’s 2016 Bordeaux Blend.  As a $30 supplement to the spectacular dinner, guests can choose to sip on Mercury Head’s 2016 Cabernet Sauvignon.

The ticketed dinner is priced at $150 per person (tax and gratuity included). Guests must be at least 21 years old to consume alcohol at the event.
